Ingredients
  • 3 Cups Uncooked Penne pasta
  • 1 Tbsp. olive oil
  • 8 Slices Bacon (chopped)
  • 2 Cloves Garlic (finely chopped)
  • 3 Each Scallions (thinly sliced)
  • 1/2 Cup Green Peas
  • 1/2 Cup Parmesan (grated)
  • 1 Cup Cream

Instructions
  1. Cook pasta (in large pot of salted boiling water) until al dente
  2. Heat olive oil in a sauté pan over medium heat
  3. Add garlic and bacon; lightly sauté over medium heat
  4. Add green peas and scallions; continue to cook over medium heat
  5. Once pasta is cooked, strain (reserve a small amount of cooking water) and add pasta back to pot
  6. Add reserved cooking water to the bacon mixture; stir and add all ingredients from the sauté pan to the pasta
  7. Mix in parmesan cheese and slowly stir cream into the pasta over low heat
  8. Season with salt and pepper (more cream can be added at this stage if needed to achieve desired consistency)
